I found out the Thermometer that came with the smoker was 30 degrees off .. I had been really slow cooking my meats ... using the Maverick I was able to get the correct temperature in the box and the alarm let me know when it was cooling down .. With the meat thermometer the roast came out tender and a perfect medium rare !
